Sage is the dried leaves of the herb Salvia officinalis. The aromatic leaves are green to silvery gray in color. Sage is highly aromatic and is characterized by a medicinal, woody/piney flavor.
Use ground Sage sparingly; foods absorb its flavor more quickly than leaf Sage. Sage is a wonderful flavor enhancer for seafood, vegetables, breadsticks, cornbreads, muffins, and other savory bread. Top swordfish, tuna, steaks, chicken, and turkey pieces with Sage-lemon butter.
