Pak Choi/Pok Choi

Bok Choy, Pak choi, or Pok Choi is a type of Chinese cabbage. Chinensis varieties do not form heads and have green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard greens.
